I’d do bites instead of thighs. They give you something completely different from the beef bowl and burger, and they can be made in the smoker, oven or air fryer.

Prep Time: 15 minutes
Cook Time: 15–30 minutes
Serves: 4

Chicken

2 lbs boneless, skinless chicken breasts, cut into 1½-inch pieces
2 tbsp avocado oil
2 tbsp Rave Korean BBQ Rub
Sticky Korean BBQ Glaze
¼ cup Rave Infusion Gluten-Free Soy Sauce (available on our website)
3 tbsp honey (Kitako Lake Honey available on our website)
1 tbsp rice vinegar
1 tbsp Rave Korean BBQ Rub
1 tsp cornstarch
1 tbsp water

Directions

  • Toss chicken with avocado oil and Korean BBQ Rub.
  • Whisk soy sauce, honey, vinegar and seasoning together in a small saucepan.
  • Simmer for 2–3 minutes.
  • Mix cornstarch with water, stir it into the sauce and simmer until glossy and slightly thickened.

Choose Your Cooking Method

🔥 Smoker: Cook at 375°F for approximately 20–25 minutes, until the chicken reaches 165°F.

🍳 Oven: Bake at 400°F for 18–22 minutes, turning halfway.

🍟 Air Fryer: Cook at 390°F for 10–14 minutes, shaking halfway through.

Toss the hot chicken bites in the sticky Korean BBQ glaze.
Return to the heat for another 2–3 minutes to set the glaze.
Finish with sliced green onions.

🔥 Travis’ Tip

Don’t sauce them too early. Get some colour on the chicken first, then add the honey-based glaze at the end so it gets sticky without burning.

🍽️ Perfect Pairings

Side: Jasmine rice and roasted broccoli
Drink: Ginger ale, sparkling lime water or a crisp lager

These also give you three good recipe photos for the QR page: big stacked burger, colourful beef bowl, glossy sticky chicken bites.
