Ingredients:
- 1 fresh pineapple, halved and hollowed out
- 1 cup pineapple, chopped
- 1 cup mixed bell peppers (red, yellow, green), chopped
- ½ cup red onion, chopped
- 1-2 jalapeños, seeded and chopped
- Fresh cilantro, chopped, to taste
- Chili Lime seasoning, to taste
- 1 lb mahi-mahi, cut into strips
- Oil, for frying
Beer Batter:
- 1 bottle Corona beer
- 1 cup flour (add more as needed)
- 1 egg
- 2 tbsp Chickity Chicken seasoning
Instructions:
- Prepare the Pineapple Salsa
In a bowl, mix the chopped pineapple, bell peppers, red onion, jalapeños, and cilantro. Season with Chili Lime seasoning to taste. Spoon the salsa back into the hollowed pineapple halves for serving. - Season the Fish
Coat the mahi-mahi strips with Chili Lime seasoning, ensuring even coverage. - Make the Beer Batter
In a mixing bowl, whisk together the Corona beer, flour, egg, and Chickity Chicken seasoning. Gradually add more flour until the batter is thick but still flows easily. - Fry the Fish
Heat oil in a skillet over medium-high heat. Dip each fish strip into the beer batter, allowing any excess to drip off, then carefully place in the hot oil. Fry until the fish is golden brown and crispy. Remove and drain on paper towels. - Serve
Place the fried mahi-mahi in tortillas, top with the pineapple salsa, and enjoy!
