Ingredients

1 lb raw shrimp (peeled & deveined, tails optional)
2 tbsp cornstarch
1–1.5 tbsp Chipotle & Chill rub
1 tbsp avocado oil (or enough for light frying)
Lime wedges

Instructions

  1. Prep
    Pat shrimp completely dry (this matters for crisp)
    Toss with cornstarch until lightly coated
    Add rub and toss again
  2. Cook (2 options)
    Pan-Fry (best result)
    Heat oil in a pan on the BBQ or stove (medium-high)
    Cook shrimp 2–3 mins per side until golden and crispy
    Don’t overcrowd the pan
    Air Fry
    Preheat to 400°F
    Light spray of oil
    Cook 6–8 mins, shaking halfway
  3. Finish
    Squeeze fresh lime over top
    Optional: tiny sprinkle of extra rub right at the end
    Optional Sauce (highly recommend)

Mix:

1/2 cup mayo
1 tsp Chipotle & Chill
squeeze of lime
