Ingredients

2 lbs ground beef (80/20 is ideal)
2 eggs
1/2 onion (very finely diced)
3 cloves garlic (minced)
2–2.5 tbsp Chipotle & Chill rub
1 tsp Worcestershire sauce
1 cup shredded cheddar or mozzarella
Glaze
1/2 cup ketchup
1 tbsp brown sugar
1 tsp Chipotle & Chill rub

Instructions

  1. Preheat
    Traeger to 250°F
  2. Mix

Combine:
ground beef
eggs
onion + garlic
Worcestershire
Chipotle & Chill rub

Mix just until it holds together
👉 don’t overmix

  1. Stuff & shape
    Flatten into a rectangle
    Lay cheese down the middle
    Roll into a tight loaf and seal edges well

👉 If it feels loose, chill it 15–20 mins before cooking

  1. Smoke
    Onto the grill (rack or straight on grates)
    Cook until 140–145°F internal (~60–75 mins)
  2. Glaze & finish
    Brush glaze on
    Increase heat to 350°F
    Finish to 160°F internal
  3. Rest
    10–15 mins before slicing
