Instructions:

- Let the seasoned pork shoulder sit for about 15-30 minutes to allow the rub to set into the meat.
- Preheat the Smoker:
- Set your smoker to 250°F and add wood chunks (applewood or hickory work well for pork) for a steady, mild smoke flavor.
- Smoke the Pork:
- Place the pork shoulder directly on the smoker grates.
- Smoke at 250°F, and spritz the meat every 45 minutes with a mixture of apple juice and apple cider vinegar.
- Wrap and Finish:
- Once the bark has set and reached a deep, dark color (around 5-7 hours), place the pork shoulder in a tinfoil pan.
- Pour ½ cup of cherry soda into the pan for added moisture and sweetness.
- Wrap the pork shoulder tightly in foil or cover the pan with foil, sealing the edges well.
- Continue Smoking:
- Return the wrapped pork shoulder to the smoker and cook until it reaches an internal temperature of around 200°F, or until the meat is tender and pulls apart easily (usually takes an additional 2-3 hours).
- Rest and Shred:
- Remove the pork shoulder from the smoker and let it rest for at least 30 minutes in the foil.
- Once rested, shred the pork using two forks, discarding any excess fat.
- Serve:
