Ingredients:
- 2 racks of pork back ribs (about 4 lbs)
- 3 tbsp Rave BBQ Rubs Cinnamon Hearts Seasoning
- 1 tbsp Rave BBQ Rubs Sweet & Smokey Maple
- 1/4 cup pure Canadian maple syrup
- 1/4 cup apple cider (local, if possible)
- 2 tbsp Dijon mustard (made in Canada)
Instructions:
- Prep the Ribs: Remove the membrane from the back of the ribs. Pat dry and rub with 2 tbsp of Cinnamon Hearts Seasoning and 1 tbsp of Sweet & Smokey Maple.
- Smoke the Ribs: Preheat your smoker to 225°F. Place the ribs on the smoker, bone-side down, and smoke for 2 hours, or until the internal temperature reaches about *165°F.
- Wrap with Flavour: Mix maple syrup, apple cider, and Dijon mustard. Wrap the ribs in foil with half of the mixture and return to the smoker. Continue cooking for another 2 hours, until the internal temperature reaches *195°F to 203°F for maximum tenderness.
- Finish with a Glaze: Unwrap the ribs, brush with the remaining mixture, and sprinkle 1 tbsp of Cinnamon Hearts Seasoning on top. Smoke for an additional 30 minutes to caramelize the glaze.
